Strawberry Vodka Cocktail

Imagine the summer starting with your first bite into a perfect red berry... tart, sweet, and juicy. Whether freshly picked from the field under the bright sun, or bought from a roadside fruit stand, ripe strawberries are one of summer's many pleasures. I have featured several strawberry recipes already on this blog, like Strawberry Banana Muffins, or Strawberry &Chambord Cream Trifle. It is safe to say, these beautiful red berries are one of my favorites!

After picking up several pints from a local farm, I set my sights on trying something new and different from my previous posts. My husband and I are always trying to find the new 'it' cocktail for our house. We have our old standbys, but this bright red, slightly sweet, very refreshing drink is perfect for the warm summer evenings out on the patio. Fresh strawberries are muddled with lime, sugar, and vodka, plus a splash of club soda. This Strawberry Vodka Cocktail (called a Caipiroska) is a delicious addition to any menu!

Strawberry Vodka Cocktail (Strawberry Caipiroska)
very slightly modified from the original recipe found in Food & Wine Cocktails 2014

1 generous cup of strawberries, washed & hulled (stem removed), plus more for garnish
1/2 fresh lime, quartered
2 ounces quality vodka, chilled
2 ounces club soda or lemon lime soda, chilled
1 1/2 tablespoons sugar
ice

In a cocktail shaker (or old jam jar, in my case), muddle (squash) the lime, berries, and sugar until the juices have been released. Add the vodka and several cubes of ice. Shake to combine and strain (optional) into your serving glass. You can always add some of the strawberry mash for more texture and flavor.

Add the soda and stir gently. Garnish with a strawberry or lime wedge.
